Let’s Talk About Ba Bar’s Macarons

What else could be more important?

Roger Martinho may not be a household name here in Seattle, but give it time. He’s the incredibly talented semi-new pastry chef at Ba Bar, who’s been whipping up classic French desserts since the beginning of the year. That includes macarons.

Martinho, whom Ba Bar owner Eric Banh calls “a kick-ass cantankerous old French guy,” will be rotating a selection of 24 flavors of macaron, a dozen of which will be offered every Monday starting at 7 a.m.

The current flavor line-up includes: tiramisu, cappuccino, Nutella, pistachio, vanilla, raspberry, strawberry, lemon poppy seed, Key lime, almond, mango, matcha tea, passion fruit, rose pomegranate raspberry, salted caramel, red velvet, banana, Wu Wei, lavender, coconut, pineapple, apricot cheesecake, spicy dark chocolate pepper, maple syrup bacon, plus a weekly “chef’s whim” flavor.

And because you can’t sell pastries in Seattle that can’t be gussied up with team colors, Martinho makes special blue and green (Key Lime) Seahawk macarons, which are available on game days and special order (two dozen minimum).

I got to sample a few flavors in July and they were delightful—not too sweet, a nice amount of filling, and the perfect size. 

Macarons are $1.70 each. You only have five days left to wait to buy some!
