PNW mom, blogger and coupon-cutter Karrie Truman wants to make your life easier. Her blog HappyMoneySaver.com specializes in practical DIY projects and freezer-friendly recipes that you and your wallet (!!) will love.

One of our favorite summer recipes is her BBQ Chicken Pizza. This one requires a little elbow grease but is so worth it– fire up your grill and prepare for some serious flavor. “There’s nothing like the char from the chicken and the pizza crust to create the perfect bite,” Truman says.

Looking to make your own pizza dough? Be sure to check out Truman’s recipe in her freezer meal cookbook out later this year.

Grilled Hawaiian BBQ Chicken Pizza

Ingredients
Pizza Dough (can be homemade or purchased)
  • ¼ cup olive oil
  • 1-2 tablespoons cornmeal
Pizza Toppings
  • ½ – ¾ cup BBQ sauce
  • 1 cup mozzarella cheese
  • 1 cup grilled pineapple
  • 1 large grilled chicken breast
  • Handful of chopped cilantro

Instructions

  1. Roll out your favorite pizza dough on a cornmeal-lined pizza peel. Brush with olive oil.
  2. Slide the dough onto a 500 degree grill oil-side down. Quickly brush the other side of the dough with olive oil. Cook for two minutes with the lid down. Flip the dough and cook 2 more minutes on the other side.
  3. Brush BBQ sauce on the pizza crust. Add cheese, grilled pineapple, and grilled chicken on top of the pizza.
  4. Slide the pizza back on the grill for two more minutes or until the cheese is melted.
  5. Take the pizza off the grill. Pour BBQ sauce on top of the pizza and toppings. Sprinkle chopped cilantro all over the pizza. Slice and enjoy!
