Restaurant News: Jason Stratton’s Aragona and A French-Focused Wine Bar Coming in October

New From Spinasse Chef
Jason Stratton has proven his finesse with the fine foods of Italy’s Piedmont region at the beloved Spinasse; the adjoining Artusi has steadily developed into a worthwhile dining destination in its own right. In September, Stratton will school us on the finer points of Spanish cooking when he opens Aragona (Downtown, 96 Union St.), in the former home of Thoa’s. There will be an emphasis on seafood in dishes inspired by Stratton’s time in Spain, and his longtime chef de cuisine at Spinasse, Carrie Mashaney, will lead the kitchen. This is one of the most hotly anticipated restaurant openings of the year, so you may want to just get in line right now.

French Wine Bar Opening
It’s been almost a year since David Butler announced his plan to open a French-focused wine bar. At last, the former Le Gourmand sommelier will launch Le Caviste (1919 Seventh Ave.; lecavisteseattle.com) this October (as of press time). Butler is hoping to re-create the romance and spirit of his favorite Parisian bars à vin, and so Le Caviste will be tiny, with a small retail selection (around 50 bottles). Vinophiles have been buzzing about the place, which will feature charcuterie and Euro cheeses to nosh, and 15–20 French wines available by the glass. A.A.S.
