Saboteur Bakery pops up three times at RN74

Michelin-starred pastry chef is from soon-to-open Bremerton Bakery

If you’re anxious to try Michelin-starred pastry chef Matt Tinder’s gluten-y goods, you’ll have three chances to do so this month (Nov. 17, 19 and 24) at RN74 Seattle.

Tinder and his business and life partner Kate Giuggio are opening the much-anticipated Saboteur Bakery, close to the ferry terminal in Bremerton, in early 2016, but thanks to their long-term friendship with RN74’s executive chef David Varley, we get a sneak peek at their assortment of freshly baked breads and pastries. Yes, think handmade panettone.

Also look for savory croissants, brioche sucree and spelt Vollkornbrot, with all ingredients sourced in Washington, just in time for your Thanksgiving feast. Tinder was at the Restaurant at Meadwood in Napa Valley when it earned its third Michelin star. According to Eater, he will mill his own grains on site and plans to offer “hard-to-find, naturally-leavened breads.” The Saboteur pop ups at RN74 will occur between noon and 6 p.m. all three days.

Incidentally, if you don’t have Thanksgiving plans, consider booking a three-course meal ($68/person) prepared by Varley at RN74. We peeked at the menu and the black truffle gnocchi Parisienne and sweet butter basted heritage turkey with roasted chestnut and foie gras stuffing sounds, um….yeah. To-die-for. Plus, for $28, you can score a leftover sandwich kit with all of the ingredients needed to build four roasted turkey sandwiches at home.
