Sometimes, simplicity can be a wonderful thing. With sandwiches, Seattle has been doing a pretty good job of dressing up meat, bread and veggies, but all that can be a little showy.

Sometimes, all you want are the basics stacked on top of one another. The Great Northwest Soup Company excels at such a concept, making very simple sandwiches with quality ingredients. Further, there’s a wealth of soups (as the name might suggest) to accompany any sandwich, including classics like tomato basil, or the more unique chicken chili and zesty chicken quinoa. And at its Eastlake location, sampling is encouraged (or at least allowed) so you can select the perfect soup mate to your sandwich.Chicken curry soup alongside cornbread and ham, arugula, tomato, and cheese sandwich from The Great Northwest Soup Company

On my visit, I kept things simple with a ham, cheese, tomato and arugula sandwich.

The veggies were abundant and as fresh as can be while the ham had a soft sweetness and wasn’t too salty–a testament of high-end deli meat. For my side, I chose the soup that I grew up eating (thanks to my mother): chicken curry. It was spicy, chunky, savory, aromatic and most of all, abundant.

I went the combo route (soup and a half sandwich for $8.99), but that still alloted me eight ounces of chicken curry, which turned out to be more than enough. Throw in some free cornbread (honey on the side) and bits of fresh cookie for the taking on the way out, and my eyes were open, my stomach full, and my wallet was thinking, “this might be the best lunch value in town.”
