Everyone knows that Heather Earnhardt makes the best biscuits in town. But last summer, I discovered she’s also a master shortcake baker, when I had the strawberry shortcake at The Wandering Goose, Earnhardt’s bakeshop and biscuit sandwich spot. The shortcake—a lightly sweetened, butter- and cream-moistened version of her biscuit recipe—was split and filled to bursting with sliced, peak-season strawberries tossed in elderflower syrup, and then topped with a generous dollop of whipped cream strewn with torn mint. It’s summer on a plate. Take note: Strawberry shortcakes are a special only on Fridays, all day and into the evening, when Earnhardt hosts her weekly fried chicken dinners.
