But Matt Dillon, a 2012 James Beard Award winner and the force behind Sitka & Spruce and The Corson Building, ended the drought with Bar Sajor. Here, folks who crave Sitka’s menu—flatbreads, wood-fired vegetables and meats, raw and cured seafood, pickles, yogurt and ancient grains—will find much to enjoy and a Eurocentric wine list to sip alongside.
