Marination Station Opens on Capitol Hill

Good morning, sunshine! And good news for Marination fans: The mobile food mavens have put down roots on the corner of Pike and Broadway, just up the escalator from QFC, and opened Marination Station.

They'll be serving all your favorites--the spam sliders, the kimchi fried rice--along with new menu items: Loco Moco (a Hawaiian gut-buster made by topping white rice with hamburger, egg and gravy--yum!); musubi (essentially Spam sushi), kimchi tofu soup, and miso ginger chicken bánh mì.

And! There will be beer to wash it all down with and a small outdoor dining area, too, which the Marination ladies have dubbed "the beer garden." Mahalo!

Marination isn't the first of the mobile trucks to go brick-and-mortar, though: Rancho Bravo took over the old KFC space a couple of years ago with great success. And they won't be the last: Pick up the Seattle Magazine May issue (on newsstands early next week) to read Alicia Vermillion's piece on the trend of mobile eateries putting down roots, taking on leases and doing sit-down service.

Speaking of Vermillion, she's the editor at Eater Seattle, which launched yesterday. And she's off to a running start with so much food news it'll make your head spin!
