Franz Gilberton, whose Honore bakery in Ballard makes irresistible croissants, tarts, and arguably the city’s best kouign amann, is teaming up with a friend to open Chico Madrid this later month in the newly remodeled Belroy Apartment building on the corner of Bellevue and Roy streets) on Capitol Hill. Gilbertson and Jacob Daley missed the bocadillos—the ubiquitous baguette sandwiches made with cured meats and cheeses—that they’d eaten almost every day during trips to Spain. And so those bocadillos, along with bikini sandwiches (grilled cheese sandwiches similar to Panini) and Spanish wines and toasts made on Columbia City Bakery bread, will anchor the menu. The plan is to open early for coffee and pastries and stay open through dinnertime into the late evening, with the same menu served all day. Something else to look forward to: outdoor seating when the weather warms up.
