What do we love about Lighthouse? It’s not the décor, which is nonexistent. It’s that it puts us at the center of the roasting process. Lighthouse is one of our most respected local roasters (in Seattle, that’s saying something), and at its upper Fremont café you can sip a perfectly balanced coffee right next to a pile of burlap sacks of beans and a humming, fragrant roasting machine. Sitting here, it’s not hard to start thinking, “Hey, I like coffee. I like machines. I could do this…” But before you go to the trouble of opening your own coffee shop, you might instead consider just chillaxing out front on a sunny day with the rest of the non-nine-to-fivers.
