On Sunday, May 23rd at 5:00pm (3:30pm if you purchase a VIP ticket), Bell Harbor International Conference Center will be hosting Cochon 555, quite possibly the most extravagant celebration of the heritage pig Seattle will see this year.
Chefs John Sundstrom (Lark), Adam Stevenson (Earth & Ocean), Anthony Hubbard (Chow Foods), Chester Gerl (Matt's in the Market), and Tamara Murphy (Brasa) will each prepare a 140 pound heritage breed hog (including everything but the oink!) in this competition in a bid to be crowned "Prince of Porc". Both the public and the team of professional judges (disclosure: I am one) will determine a winner based on presentation, utilization and overall best flavor.
During the 2.5 hour reception, guests will be treated to a flurry of dishes. What'll be served up on May 23rd remains a surprise, but last year, dishes included a terrine made with head, trotters, and shank meat with black truffles, pork belly consommé with brain mousse, lardo on bread, and sweet and smoky bacon macaroons.
The five wines poured at this event include offerings from McCrea Cellars, Long Shadows Wineries, Buty Winery, Fidelitas Wines, and Elk Cove Vineyards.
Tickets for regular admission to this event are $125 (though use the discount code: formaticum for a bit of savings.) A portion of the proceeds will benefit the Neighborhood Farmers Market Alliance.
Tickets for the VIP event are $175. In addition to early admission, VIP ticket holders are treated to additional reserve wines, and an oyster tasting and special selection of reserve wines. Artisan cheeses from DeLaurenti, savory cocktails by Daniel Hyatt of Alembic SF and craft brews from Pike Brewing Company, will be on offer as you mingle with the chefs, winemakers, and judges at this event.
