Trabant, which achieves a certain scruffy chic, looks like it’s pulled as many all-nighters as espresso shots. Don’t be fooled, however—there’s more to the place than term-paper fuel. Like Ballard’s Aster, Trabant has one of the few Clover machines outside of a Starbucks, and it is used to brew high-quality java from carefully selected small estates that charge a premium for their beans.
