What may strike you about the restaurants we included in the November Best New Restaurants issue (on newsstands now) is just how specialized and unique each of the restaurants is.
Little Uncle (pictured above), Blind Pig, and especially Crumble & Flake and Hot Cakes: these are not restaurants that are catering to a wide range of people, but rather chef-run places where the passion's on the plate, where the chefs are doing their own thing their own way, making their own rules. I dig that about them. If you ask me, the more singular the vision, the better it is for Seattle's evolving food culture. Taste around and see if you agree.
I'm equally excited about introducing you to this year's lineup of Tastemakers: the cooks, architects and pastry chefs who are right on the verge of making it big.
Last year's inaugural Tastemakers list featured the now-owner of Crumble & Flake, the creator of Rachel's Ginger Beer and the welcoming bar, Montana, and Mike Easton, whose Il Corvo is so popular he's planning on moving into bigger digs later this year. We expect equally big things from 2012's crop.
Finally, you'll get to know Meeru Dhalwala, the force behind South Lake Union's Shanik (the Indian sibling restaurant to world-reknown Vij's in Vancouver, BC, opening in December). For that profile we called in the experts: husband and wife food writers and Vancouver locals Neal Mclennan and Amanda Ross.
