Sommelier David Butler Spills on Le Caviste, His Forthcoming French Wine Bar
It’s been almost a year since David Butler announced his plan to open a French wine bar in downtown Seattle. At last, the former Le Gourmand sommelier will launch Le Caviste (translation: the cellar man) downtown at 1919 7th Avenue in October.
Butler’s hoping to recreate the romance and spirit of his favorite Parisian bar à vins, such as Le Baron Rouge pictured above. And so Le Caviste will be tiny, with seating for 25 or 30 and about 20 wines available by the glass, as well as a small retail selection (around 50 bottles). Vinophiles have been buzzing about the place, which Butler tells me will also have charcuterie and Euro cheeses to nosh with the wine.
