Portland’s favorite roast landed an arrow in Seattle’s rapidly beating coffee heart when it opened two Capitol Hill cafes. The stripped-down, midcentury-modern spaces have been packed with Seattle U students and bearded Pine Street hipsters ever since. These guys are restless expansionists who, in only a decade of business, have also opened in New York and Amsterdam, but their meteoric rise is based, improbably enough, on the quality of their roast. Fanatical about microclimates and regions of origin and varietals, Stumptown is where you go when you want to be sure the roaster has put some serious thought into your cuppa. The first time we heard a Seattleite say, “You’ve got to try this place in Portland,” we knew Stumptown was on to something.
