Food We Love: Tonkotsu Ramen at Arashi Ramen

Warm up with this aromatic, velvety bowl of comfort

When it comes to winter warmers, I prefer a bowl of slowly simmered Japanese pork-and-noodle soup over chowder or chicken soup any day. I’m currently obsessed with the tonkotsu ramen at Arashi Ramen. For the shio (salt-based) tonkotsu ($8.95), master chef Daisuke Ueda, who splits his time between the popular Tukwila location and the new, 29-seat dining room in Ballard, simmers his broth for 16 hours. The result is an aromatic, almost velvety bowl of comfort topped with pork belly, a soft-boiled egg, bean sprouts and green onions. Mmm. I love cold weather.
