I’ve long awaited the return of the proper layer cake. May the new guard of old-school bakers be led by self-taught wonders like Charlie Dunmire of Georgetown’s Deep Sea Sugar and Salt, who sells slices of her modernly beautiful, subtly sweet cakes out of an Airstream on weekends at the Georgetown Trailer Park Mall. The London Fog ($6 a slice, whole cakes by request) is a crowd favorite for good reason: It’s composed of six layers of Earl Grey–flavored cake soaked in tea-and-honey syrup, with an orange peel and bergamot mascarpone filling—thankfully, generously applied—with marbled Earl Grey cream cheese frosting. There are only four seats inside the Airstream, plus three outside, so plan to get your treats to go. Georgetown, 5805 Airport Way S; 206.330.5110; deepseasugarandsalt.com.
