You’ve no doubt had trouble getting a reservation at the incredibly popular Shiro’s Sushi in Belltown. You can only book 30 days in advance, and chances are you’ve had to try numerous times.

Now, the team behind Seattle’s longtime purveyor of seafood magic is set to open a new 26-seat restaurant called Shomon Kappo Sushi just blocks away on Sept. 6.

Kappo-style cuisine is a traditional Japanese dining experience that emphasizes an interactive relationship between chef and diners. The word “kappo” means “to cut and cook.” Shomon will use ingredients from Washington’s land and waters, as well as seasonal ingredients from Japan that are not available locally.

Shiro’s has been operating in the Belltown neighborhood since 1994, and is renowned for being among the area’s first nigiri-style sushi restaurant. Shomon is at 2301 Fifth Ave.
