Sweetgreen Expands Again with Capitol Hill Opening
The fast-casual chain now has three Seattle-area locations

Clearly, Seattle loves fast-casual salads and customizable grain bowls. With two locations already in South Lake Union and Totem Lake, Sweetgreen is opening a third spot at 11th and Pine in Capitol Hill on Oct. 22.
This new Capitol Hill location will be the first in the Pacific Northwest to feature the Infinite Kitchen — a technology Sweetgreen first rolled out last year in Naperville, Illinois. Machines take care of assembling meals, while Sweetgreen’s staff handle customer service and add the finishing touches. Los Angeles-based Sweetgreen joins other big names such as Starbucks and Chipotle, who are also testing automation.
Customers can customize their meals with organic tofu from Island Spring Organics, a Vashon Island-based producer that’s been around since the 1970s, known for its certified organic, non-GMO tofu.
Sweetgreen opened its first Seattle-area location in Kirkland to much fanfare in January.
To celebrate the Capitol Hill opening, Sweetgreen is hosting a party from 10:30 a.m. to 1:30 p.m., Oct. 22. There will be live music from Hrvst House, giveaways, a limited-edition fall drink from Rachel’s Ginger Beer, custom beanies from G2Gi, and hand-poured scented candles from Noir Lux. Supplies are limited.
For every meal purchased on opening day, Sweetgreen will donate a meal to Northwest Harvest, a local organization that provides nutritious meals to those in need. Sweetgreen donates 100,000 meals annually during its opening day celebrations.
Located at 1530 11th Ave., the 2,500-square-foot space seats 22 diners. The restaurant will also feature a painted lantern installation by local artist and illustrator Hayley Deti. Sweetgreen, founded in Washington, D.C., in 2006, now operates more than 230 locations across the U.S.
