Hey, Bellevue! You’re getting a chocolate pop-up

Seattle Chocolate Company opens jcoco shop June 1

As if there wasn’t already ample eye candy at The Bellevue Collection, on June 1, the Seattle Chocolate Company will unveil its first standalone chocolate shop inside the Eastside shopping mecca.

The pop-up will focus on jcoco, the company’s line of brightly-wrapped fine chocolate bars in tempting flavors like Peanut Strawberry Baobab and Black Fig Pistachio.

Over the course of its seven-month run, the pop-up will undergo three transformations inspired by the colors and themes of three different chocolate bars. Yes, it’s a bit matchy-match but we are suckers for chocolate.

The first pop-up will be a tropical oasis inspired by the vibrant cyan blue of the Vanuatu Coconut Pecan bar (and its South Pacific origin), with shot glasses of warm vanuatu milk chocolate and bowls filled with cocoa nibs. Later, it will shift to the bright orange of the Cayenne Veracruz Orange–just in time for fall and the holiday season.

The jcoco pop up will be open through December 2015 at 575 Bellevue Square, Space 175, and will host Friday tasting events with beverage and food pairings for the jcoco bars. For more information, visit the jcoco website.
